About
A bakery built around a fire
Ember & Rye is a wood-fired bakery and café in Portland. We bake bread and pastry every morning and serve it with coffee.

The oven sets the pace of the day.
Before the doors open, the fire is built up and the oven floor takes on heat. Bread goes in first, while it is hottest. Pastry and café bakes follow as the temperature drops.
By the time the café is busy, the counter is full of what came out that morning.
How we bake
- One wood-fired oven
- Every loaf bakes on the floor of the same oven. The fire gives the crust its dark, blistered edge.
- Slow sourdough
- Our bread is naturally leavened and given time to ferment, so the flavor runs deep and the crumb stays open.
- Rye at the center
- Rye is in our name and in much of what we bake, from dense loaves to the chocolate cookies.
